Recipe for Class A2
Rock Cake
​Ingredients
100g Mixed dried fruit
1 Medium egg
100g Caster sugar
225g Self-raising flour
Pinch of salt
100g Margarine
Milk to mix

Method

Preheat the oven to 200C (400F) / Gas mark 6.

Grease 2 baking trays.

Mix the flour and salt, rub in the margarine until the mixture resembles breadcrumbs.

Stir in the dried fruit and sugar.

Mix to a stiff dough with egg and milk.
-
Place in rough heaps on baking sheets and bake for 10-15 minutes until pale golden brown at the edges.
